Creamy Mushroom Miso Udon Noodles with Chicken

Ingredients:

  • 2 serving of udon noodles (500 mg)
  • Shiitake mushroom (portion by the heart)
  • Chicken breast (portion by the heart)
  • 3 tbsp of Butter
  • 4 cloves of minced garlic 
  • 1/2 of yellow or white onions (sliced or diced)
  • 2 tbsp of Miso paste
  • 1.5-2 cups of Heavy cream
  • Garlic powder
  • Onion powder
  • Dried Parsley or Italian Seasonings
  • Smoked Paprika or Cayenne pepper
  • Salt & Pepper

Chicken Marinate:

  • Garlic powder
  • Onion Powder
  • Dried Parsley or Italian Seasonings
  • Smoked Paprika or Cayenne Pepper
  • Salt & Pepper

Cooking Instructions: 

  1. Seasoned the chicken evenly on both sides with all the ingredients listed above. 
  2. Place the marinated chicken in the air fryer at 400F for 25 minutes or until chicken is golden with a little crisp on the outside. 
  3. Minced 2-3 cloves of garlic and diced half of a white or yellow onion.
  4. On medium heat, add butter to a pan. Let the butter melt completely, and then add minced garlic and sliced onions. Let it cook for 1-2 minutes or until fragrant. 
  5. Add mushroom, 2-3 tbsp of water and 1 tbsp of oyster sauce. Stir and let it cook for a few seconds. 
  6. Add 1.5 cups of heavy cream, 2 tbsp of miso paste, 1 tsp of soy sauce, and 1 tsp of sugar. Bring the sauce to boil and then add in the udon noodles.
  7. Mix everything together. Garnish with green onions or shredded seaweed. ENJOY!
